This coffee is a honey processed yellow caturra varietal, from the Trapiche farm, located in Samaipata region.
The farm is located between 1,500 and 1,650 masl (metres above sea level) with native tree shade and patches of wild forest to help conserve the biodiversity of the farm.
After the coffee is picked, the cherries are then washed where part of the cherry skin is removed. Then the sticky parchment and leftover pulp is moved to drying beds for the entire drying time, until it reaches 12% of moisture content. Finally, the coffee is moved regularly to allow a consistent drying, especially at midday when the outdoor temperatures go high.
Tasting notes of jasmine, pineapple and bergamot.
