Matcha is not just for lattes. Here are two of our favourites: a floral lavender matcha latte for slow mornings, and a sparkling matcha spritz for sunny afternoons.
What you need

- Sweetbird Lavender Syrup
- A small whisk or milk frother
- Milk, sparkling water or tonic, and ice

Step by step
- Sift the matcha into a small bowl or cup.
- Add the water (warm, not boiling, for the latte) and whisk until smooth and foamy.

Tips
- Never use boiling water. It makes matcha bitter.
- Sift first to avoid lumps.
- Pour the matcha last in the spritz for the layered look.
